Deliciously Tangy Lemon Gingerbread Cookies: A Sweet Treat for Any Occasion

  • 1 cup (2 sticks) butter, softened

  • ¼ cup molasses


  1. Preheat oven to 350°F (175°C). Grease two baking sheets.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla extract. Stir in lemon zest.
  3. In a separate bowl, sift together flour, ginger, baking soda, salt, cinnamon and nutmeg. Gradually add to creamed mixture, stirring until well blended. Stir in molasses.
  4. Drop dough by teaspoonfuls onto prepared baking sheets. Bake for 10 to 12 minutes in preheated oven. Cool on wire racks.
