Ingredients

Instructions
- Preheat oven to 350°F (175°C). Grease two baking sheets.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla extract. Stir in lemon zest.
- In a separate bowl, sift together flour, ginger, baking soda, salt, cinnamon and nutmeg. Gradually add to creamed mixture, stirring until well blended. Stir in molasses.
- Drop dough by teaspoonfuls onto prepared baking sheets. Bake for 10 to 12 minutes in preheated oven. Cool on wire racks.
