Ingredients

For the lemon blueberry cake:

  • 2 ½ all-purpose flour
  • 1 cup unsalted butter, softened at room temperature
  • 2 cups of granulated sugar
  • 4 eggs at room temperature
  • 1 teaspoon of baking powder
  • ½ teaspoon of baking soda
  • 1 cup buttermilk at room temperature
  • 1 cup of blueberries (fresh or frozen)
  • 1 lemon (juice of one lemon)

For the cream cheese frosting:

  • 16 oz cream cheese, softened
  • 4 oz unsalted butter, room temperature
  • 2 cups of powdered sugar
  • 1 teaspoon of vanilla extract
  • 1 lemon (zest and juice)
  • Lemon and blueberries for garnish

Instructions

To make cream cheese frosting:

  1. In the bowl, combine the unsalted butter and cream cheese until smooth
  2. Add the lemon zest and juice, 1 teaspoon of vanilla extract, and mix until well blended.
  3. Gradually add powdered sugar and mix again until completely combined.

To make the cake:

  1. Preheat the oven to 350 F.
  2. Butter and flour 2 round cake pans (8 inches) and set aside.
  3. In a medium bowl, combine flour, baking powder, and baking soda. Put aside.
  4. In the bowl of your mixer, beat the butter and granulated sugar on medium speed for two minutes, until light and fluffy.
  5. Add the eggs one at a time, beating and scraping the sides of the bowl after each.
  6. Add the lemon juice and mix until smooth.
  7. Alternate flour mixture and buttermilk, starting and ending with flour.
  8. Gently mix the blueberries.
  9. Divide the dough evenly among the prepared pans and bake for 20 to 25 minutes or until the top is lightly golden and a toothpick inserted in the center comes out clean.
  10. Place 1 layer on your cake stand, cover the top evenly with cream cheese frosting.
  11. Top with the second layer and top with frosting and spread the frosting evenly on sides.
  12. Decorate as you wish.
