Ingredients

To make a classic tiramisu, you’ll need:

  • 400g mascarpone
  • 6 eggs, separated
  • 200g caster sugar
  • 300ml double cream
  • 200g savoiardi (ladyfingers)
  • 250ml espresso, cooled
  • 3 tablespoons cocoa powder

Instructions

Start by whisking together the egg yolks and caster sugar until the mixture is pale and thick. In a separate bowl, whisk the egg whites until stiff peaks form. In another bowl, whisk the double cream until thick. Add the mascarpone to the egg yolk mixture and whisk until combined. Then fold in the egg whites and the cream until just combined.

Assembling the Tiramisu

Now it’s time to assemble the tiramisu. Line the bottom of a deep dish with the savoiardi and pour over half the espresso. Spread half the mascarpone mixture over the savoiardi. Then sprinkle over half the cocoa powder. Repeat this process with the remaining savoiardi, espresso, mascarpone, and cocoa powder. Cover the dish and chill in the refrigerator for at least 4 hours or overnight.

Serving the Tiramisu

When you’re ready to serve the tiramisu, remove it from the refrigerator and sprinkle with a little extra cocoa powder. Cut into slices and enjoy!

Tips

  • For a lighter version, you can use half the amount of mascarpone and replace the other half with ricotta cheese.
  • If you don’t have espresso, you can use strong black coffee.
  • You can also add a layer of fresh berries for a fruity twist.

With 400g of mascarpone, you can make a large, delicious tiramisu that will be sure to impress your guests. So, what are you waiting for? Give this classic Italian dessert a try and enjoy the creamy, dreamy taste of tiramisu!
