  • 1 package (16 oz.) cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 can (15 oz.) pumpkin puree

  • 1 teaspoon ground cinnamon
  • 1 package (14.1 oz.) refrigerated pie crusts
  • 1/4 cup packed brown sugar
  • 2 tablespoons butter, melted
  • 1/4 cup chopped pecans (optional)


  1. Preheat oven to 375°F.
  2. In a large bowl, beat cream cheese, granulated sugar, and vanilla extract until smooth. Add pumpkin puree, nutmeg, and cinnamon; mix until combined. Set aside.
  3. Unroll one of the pie crusts and press into a greased 13×9-inch baking dish. Spread pumpkin mixture evenly over the crust.
  4. In a small bowl, combine brown sugar, butter, and pecans; mix until crumbly. Sprinkle over pumpkin mixture.
  5. Unroll remaining pie crust and place over the top of the bars. Pinch the edges of the crusts together to seal.
  6. Bake for 30 minutes or until golden brown. Let cool before cutting into bars.
